Five Day Crockpot Dump Dinner Meal Plan

The response to my first weekly menu has been amazing. Thank you all for stopping by and taking a look at the simple meals I will be making for my family.

This week I have some chicken breast to use from our chest freezer. I centered three of our meals around using that up. I’ve also been in the mood for soup even though it has been unseasonably warm this year. There is something about soup in winter despite the temperature outside.

If you can’t tell I love my crockpot. It is my favorite kitchen tool! It really comes in handy now that I have started homeschooling. In fact, a crockpot is one of the first things I recommend a new homeschooler get! I always get a funny look when I say that but with all the planning that goes into homeschooling I tend to let cooking fall to the wayside- even though I enjoy it!

So here is the plan for this week:


Rotini Vegetable Soup

4 cups vegetable broth
4 cups crushed tomatoes
1 cup sliced carrots
1 cup sliced celery
½ cup chopped onion
1 tablespoon dried basil
1 teaspoon salt
¼ teaspoon pepper
2 cups uncooked rotini pasta
shredded Parmesan cheese for topping if desired

Add all the ingredients except the uncooked pasta and cheese to a 6-quart crock pot. Cover and cook on low heat for 8 hours. Add pasta and stir. Turn heat setting to high and cook for 20-30 minutes or until pasta is done.Serve with each bowl topped with a sprinkling of cheese.


Slow Cooker BBQ Chicken

6 chicken breasts
3/4 cup ketchup
1/2 cup orange juice
1/4 cup packed brown sugar
1/4 cup red wine vinegar
1/4 cup of canola oil
1-2 tsp Worcestershire sauce
1 tsp of minced garlic
2 tsp of cornstarch
salt and pepper to taste

In a small bowl mix together the ketchup orange juice, brown sugar, vinegar, oil, Worcestershire, garlic, salt and pepper. Place the chicken breasts into the crockpot. Add the bbq mix from the small bowl, pouring over the chicken into the crockpot. Cover and cook for six hours. Before serving add the cornstarch to thicken the sauce. If you overthicken then you can add a bit of water.


Chicken and Peppers Dish

6 boneless chicken breasts
1 jar of spagetti sauce
1 small green pepper- chopped
1 small red pepper- chopped
1 small onion- chopped
1 garlic clove minced
1 tsp oregano
1 tsp basil
1/4 cup parmesan cheese

Place chicken breasts into the crockpot. In a large bowl mix together the sauce, peppers, onion, cheese, garlic, oregano, basil, salt and pepper to taste. Pour the mix over the chicken, into the crockpot. Cover tand cook on low for 4-5 hours.


Sweet and Sour Chicken

6 boneless chicken breasts
1 12 oz jar of orange marmelade
1 pack of onion soup mix
1 12 oz bottle of russian salad dressing

Place chicken breasts into the crockpot. In a large bowl mix together the marmalade, soup mix, dressing and salt and pepper to taste. Pour the mix over the chicken, into the crockpot. Cover tand cook on low for 4-5 hours.


Sweet Potato Soup

4 cups vegetable broth
3 med sweet potatoes, peeled and chopped
1 cup diced onion
2 cloves of garlic, crushed
1 cup of cream
1 tsp dried tarragon
salt and black pepper to taste

Add the vegetable broth, sweet potatoes, onion, and garlic to your crockpot. Cook on low for 8 hours. Turn off slow cooker and add cream, tarragon, salt and pepper and blend 5 minutes with an immersion blender until soup is smooth.
